Prepare Blackening Seasoning

    Mix Spices

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well to create a uniform seasoning blend.

Cook Redfish

    Season the Fish

    Pat the redfish fillets dry with paper towels. Rub olive oil over both sides of each fillet, then generously coat with the prepared blackening seasoning.

    Heat the Skillet

    Heat a cast iron skillet over medium-high heat until it is very hot, about 5 minutes.
