Method
Dough Preparation
- 1
Activate the Yeast
In a small bowl, combine the warm milk (not hot) with the active dry yeast and 1 tablespoon of the granulated sugar. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
- 2
Mix the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, remaining granulated sugar, salt, and another 1 tablespoon of melted butter.
- 3
- 4
Form the Dough
Make a well in the center of the dry ingredients, pour in the wet mixture, and mix until the dough comes together. Add the remaining melted butter and knead the dough for about 5-7 minutes until smooth.
- 5
Let the Dough Rise
Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place until doubled in size, about 1-2 hours.
Frying and Serving
- 6
Prepare for Frying
Once the dough has risen, turn it out onto a floured surface and roll it out to about 1/4 inch thickness. Cut into squares or circles.
- 7
Heat the Oil
In a deep pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).
- 8
Fry the Beignets
Carefully drop the dough pieces into the hot oil, a few at a time, and fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.
- 9
Dust with Powdered Sugar
While still warm, dust the fried beignets generously with powdered sugar.
- 10
Serve
Serve the beignets warm and enjoy with a cup of coffee or hot chocolate!
