Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until evenly mixed.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk together the whole milk, egg, and vanilla extract until well incorporated.

Making the Dough

  1. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

  2. 4

    Chill the Dough

Cover the bowl with plastic wrap and let the dough rest in the refrigerator for about 30 minutes.

Frying

  1. 5

    Heat the Oil

In a large, deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the temperature is accurate.

  2. 6

    Fry the Beignet Bites

Using a small cookie scoop or a spoon, carefully drop spoonfuls of the dough into the hot oil. Fry in batches, ensuring not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown, turning occasionally.

  3. 7

    Drain and Dust

Once golden brown, use a slotted spoon to remove the beignet bites and drain them on paper towels. While still warm, dust generously with powdered sugar.

Serving

  1. 8

    Serve Warm

Serve the beignet bites warm, either plain or with a side of chocolate sauce, fruit preserves, or whipped cream for dipping.
