Method

Preparation of Mozzarella

    Heat the Milk

    In a large pot, heat the whole milk over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

    Add Citric Acid

    Once the milk reaches the desired temperature, remove it from heat and stir in the citric acid until fully dissolved.

    Add Rennet

    Dissolve the rennet in a small amount of cool, non-chlorinated water. Stir this mixture into the milk for about 30 seconds, then cover the pot and let it sit undisturbed for 5-10 minutes until curds form.

    Cut the Curds

    Once curds have formed, use a long knife to cut them into 1-inch cubes. Let them sit for another 5 minutes.

    Cook the Curds

    Place the pot back on low heat and gently stir the curds for about 5 minutes, until they begin to firm up.

    Drain the Curds

    Using a slotted spoon, transfer the curds to a colander lined with cheesecloth and let drain for about 30 minutes.

    Knead and Stretch

    Once drained, place the curds in a bowl and sprinkle salt over them. Microwave for 30 seconds, then knead and stretch the cheese until it becomes smooth and elastic. Repeat this process until the cheese is at your desired consistency.

    Shape the mozzarella into logs, about 1-2 inches in diameter, and set aside.

Breading and Frying

    Prepare Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with oregano, basil, and garlic powder.

    Bread the Mozzarella Logs

    Take each mozzarella log, coat it in flour, dip it in the beaten eggs, and then coat it in the breadcrumb mixture.
