Make the Sauce
In a large skillet, melt the butter over medium heat. Add the minced garlic and diced shallots, sautéing until softened and fragrant, about 3-4 minutes.

Add Crawfish
Stir in the cooked crawfish tails and sauté for another 2-3 minutes.

Create Creamy Sauce
Pour in the heavy cream and sprinkle the creole seasoning. Bring to a gentle simmer, stirring frequently, for about 5 minutes.

Finish the Sauce
Mix in the grated Parmesan cheese until melted and smooth. Season with black pepper to taste. Remove from heat.

Season the Shrimp
In a bowl, toss the peeled and deveined jumbo shrimp with olive oil and blackening seasoning until evenly coated.

Heat a large skillet over high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until blackened and cooked through. Remove from heat.
