    Caramelize Onions

    Slice the onions thinly. In a skillet over medium heat, add a tablespoon of oil. Once hot, add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.

    Cook Meats

    In a separate skillet, cook the grilled chicken, andouille sausage, and boudin over medium heat, stirring occasionally, until they are heated through and browned slightly, about 5-7 minutes.

    Prepare Red Beans & Rice

    In a saucepan, combine the cooked red beans and cooked rice. Season with salt, pepper, and Cajun spices to taste. Warm over low heat until heated through.

Assemble Cajundillas

    Fill Tortillas

    Take a chipotle tortilla and lay it flat. On one half, add a scoop of the grilled chicken, andouille sausage, boudin, and a generous portion of caramelized onions. Top with jack cheese.

    Cook Cajundillas

    Fold the tortilla over the filling and place it in a skillet over medium heat. Cook for 2-3 minutes on each side until the tortilla is crispy and the cheese is melted.

    Plate and Enjoy

    Cut the cajundillas into wedges and serve alongside the warm red beans and rice. Enjoy your Cajundillas!
