    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels. Sprinkle the blackening seasoning evenly over both sides of the fillets.

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

    Cook the Catfish

    Carefully add the seasoned catfish fillets to the skillet. Cook for about 3-4 minutes on each side until the fish is blackened and cooked through. Remove from the skillet and keep warm.

Atchafalaya Sauce

    In the same skillet, add the remaining 2 tablespoons of olive oil and reduce heat to medium. Add the minced garlic, diced green bell pepper, onion, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Stir in the diced tomatoes, cajun seasoning, and chicken broth. Bring to a simmer and let it cook for about 5 minutes.
