Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth. Melt the unsalted butter and let it cool slightly before adding it to the wet mixture.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients, and mix gently until just combined. Do not overmix; the dough should be slightly lumpy.

  4. 4

    Chill Dough

Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to allow it to firm up.

Frying

  1. 5

    Heat Oil

In a deep pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer to ensure the oil is at the correct temperature.

  2. 6

    Shape Beignets

Once the dough has chilled, use a spoon or small ice cream scoop to drop rounded tablespoons of dough into the hot oil. Do not overcrowd the pot, as this can lower the oil temperature.

  3. 7

    Fry Beignets

Fry the beignets for about 2-3 minutes on each side, or until they are golden brown. Use a slotted spoon to turn them gently.

  4. 8

    Drain and Dust

Remove the beignets from the oil and place them on a paper towel-lined plate to drain excess oil. While still warm, dust them generously with powdered sugar.
