Voodoo Shrimp

Cheddar Grits

Method

Voodoo Shrimp

  1. 1

    Prepare the Shrimp

Preheat your oven to 400°F (200°C). In a mixing bowl, combine the finely chopped jalapeños and softened cream cheese. Mix until well combined.

  2. 2

    Stuff the Shrimp

Take each shrimp and place about a teaspoon of the cream cheese mixture onto the back of the shrimp. Wrap each stuffed shrimp with a slice of bacon, securing it with a toothpick if necessary.

  3. 3

    Bake the Shrimp

Place the bacon-wrapped shrimp on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper. Bake for 15-20 minutes or until the bacon is crispy.

  4. 4

    Glaze the Shrimp

Remove the shrimp from the oven and drizzle the sweet chili sauce over them. Toss gently to coat the shrimp evenly.

Cheddar Grits

  1. 5

    Cook the Grits

In a large saucepan, bring 4 cups of water to a boil. Slowly whisk in 1 cup of grits, stirring constantly to avoid lumps.

  2. 6

    Simmer the Grits

Reduce the heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

  3. 7

    Add Milk and Cheese

Once the grits are cooked, stir in 1 cup of milk, 1 cup of shredded cheddar cheese, and 2 tablespoons of butter. Mix until the cheese is melted and the grits are smooth. Season with salt to taste.
