Method

Prepare the Seafood

    Cooking the Seafood

    Prepare your choice of seafood. For Boom Boom Shrimp, coat shrimp in a batter and deep-fry until golden brown. For fried shrimp, use the same method. For fried catfish, season with salt and pepper, coat in cornmeal, and deep-fry until crispy.

Prepare the Vegetables and Condiments

    Chop Vegetables

    Slice the tomato and wash the lettuce leaves. Chop the lettuce into smaller pieces if desired. Prepare the pickles by slicing them into rounds.

    Prepare Mayonnaise

    If using homemade Boom Boom Sauce, mix mayonnaise, chili sauce, hot sauce, garlic powder, and paprika in a bowl until well combined.

Assemble the Po'Boy

    Assemble the Sandwich

    Slice the Po'Boy bread lengthwise, being careful not to cut all the way through. Spread a generous layer of mayonnaise (or Boom Boom Sauce) on the inside of the bread. Layer with your choice of seafood, followed by sliced tomatoes, lettuce, and pickles. Close the sandwich.

Prepare the Waffle Fries

    Cook Waffle Fries

    Prepare waffle fries according to the package instructions or fry them in hot oil until golden and crispy. Serve on the side of the Po'Boy.
