Preparation of Jellyfish

    Soak the Jellyfish

    Place the dried jellyfish in a large bowl and cover with cold water. Let it soak for 4-6 hours or until it becomes soft and pliable.

    Salt the Jellyfish

    Once rehydrated, remove the jellyfish from the water and drain. Sprinkle the salt over the jellyfish and mix well. Let it sit for 30 minutes to allow the salt to penetrate.

    Rinse and Drain

    After 30 minutes, rinse the jellyfish thoroughly under cold running water to remove excess salt. Drain well and set aside.

    Slice the Vegetables

    Thinly slice the cucumber and red bell pepper into strips. Finely chop the green onions.

Prepare the Dressing

    Mix the Dressing Ingredients

    In a small bowl, combine soy sauce, rice vinegar, sesame oil, and sugar. Stir until the sugar is dissolved. Adjust with chili oil to taste.

Combine and Serve

    In a large bowl, combine the rinsed jellyfish, sliced cucumber, red bell pepper, and chopped green onions. Pour the dressing over the mixture and toss gently to combine.
