Preparation of the Duck

Clean the Duck
Rinse the whole duck under cold running water to remove any impurities. Pat dry with paper towels.

Make the Brine
In a large pot, combine 4 cups of water, 1 cup of salt, Szechuan peppercorns, star anise, ginger, and crushed garlic cloves. Stir well to dissolve the salt.

Brining the Duck
Submerge the cleaned duck into the brine. Ensure it is fully covered. Cover the pot and refrigerate for 24-48 hours for optimal flavor.
Cooking the Duck

Preheat the Oven
Preheat your oven to 350°F (175°C).

Remove from Brine
After the brining period, remove the duck from the brine and rinse under cold water to remove excess salt. Pat dry with paper towels.

Optional Marinade
In a small bowl, mix soy sauce, rice wine, and five-spice powder. Rub this marinade all over the duck for added flavor if desired.

Roast the Duck
Place the duck on a roasting rack in a baking dish. Roast in the preheated oven for 1 to 1.5 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).

Rest Before Serving
Once cooked, remove the duck from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute.
