Preparing the Beans

    Soaking the Beans

    Rinse the red beans under cold water to remove any dirt or debris. Place the beans in a large bowl and cover with water. Soak the beans overnight, or for at least 6-8 hours.

    After soaking, drain and rinse the beans again. In a large pot, add the soaked red beans and 6 cups of fresh water. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover the pot, and let the beans simmer for about 1 to 1.5 hours, or until the beans are tender. Check occasionally and add more water if necessary.

    Sauté the Vegetables

    In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, garlic, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent.

    Once the beans are tender, add the sautéed vegetables to the pot of beans. Stir in the cumin, paprika, salt, black pepper, and bay leaf. Let it simmer for another 20-30 minutes to allow the flavors to meld together.

    While the beans are simmering, cook the rice according to package instructions. Typically, this involves rinsing the rice, adding it to a pot with 2 cups of water, bringing it to a boil, then reducing the heat to low, covering, and simmering for about 18-20 minutes until the water is absorbed.
