Prepare the Blackened Redfish

Step 1: Mix the Spice Rub
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well.

Pat the redfish fillets dry with a paper towel. Rub the spice mixture generously over both sides of each fillet.

Heat olive oil in a cast-iron skillet over medium-high heat. Once hot, add the redfish fillets and cook for 3-4 minutes on each side until blackened and cooked through.
Prepare the Lemon Butter Sauce

Step 1: Melt the Butter
In a small saucepan over medium heat, melt the unsalted butter.

Remove from heat and stir in the chopped parsley. Set aside.
Prepare the Mango Salsa

In a bowl, combine diced mango, red onion, red bell pepper, chopped cilantro, and lime juice. Mix well and let sit for 10 minutes to allow flavors to meld.
Prepare the Crawfish Cream Sauce (optional)

Step 2: Add Crawfish and Cream
Add cooked crawfish tails and heavy cream to the skillet. Stir and season with salt and black pepper. Cook until the sauce thickens slightly.
Cook the Rice and Broccoli

Step 1: Prepare the Rice
Cook the rice according to package instructions. Keep warm until ready to serve.

In a separate pot, steam the broccoli florets until tender, about 5-7 minutes.
Assemble and Serve

On a plate, serve a generous portion of cooked rice. Top with a blackened redfish fillet.
