Method

Prepare the Blackened Redfish

  1. 1

Step 1: Mix the Spice Rub

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well.

  2. 2

    Step 2: Season the Redfish

Pat the redfish fillets dry with a paper towel. Rub the spice mixture generously over both sides of each fillet.

  3. 3

    Step 3: Sear the Fish

Heat olive oil in a cast-iron skillet over medium-high heat. Once hot, add the redfish fillets and cook for 3-4 minutes on each side until blackened and cooked through.

Prepare the Lemon Butter Sauce

  1. 4

    Step 1: Melt the Butter

In a small saucepan over medium heat, melt the unsalted butter.

  2. 5

    Step 2: Combine Ingredients

Add minced garlic and lemon juice to the melted butter. Stir and cook for an additional 1-2 minutes until fragrant.

  3. 6

    Step 3: Finish the Sauce

Remove from heat and stir in the chopped parsley. Set aside.

Prepare the Mango Salsa

  1. 7

    Step 1: Mix the Ingredients

In a bowl, combine diced mango, red onion, red bell pepper, chopped cilantro, and lime juice. Mix well and let sit for 10 minutes to allow flavors to meld.

Prepare the Crawfish Cream Sauce (optional)

  1. 8

    Step 1: Sauté Shallots

In a skillet, melt butter over medium heat. Add minced shallots and sauté until soft and translucent.

  2. 9

Step 2: Add Crawfish and Cream

Add cooked crawfish tails and heavy cream to the skillet. Stir and season with salt and black pepper. Cook until the sauce thickens slightly.

Cook the Rice and Broccoli

  1. 10

    Step 1: Prepare the Rice

Cook the rice according to package instructions. Keep warm until ready to serve.

  2. 11

    Step 2: Steam the Broccoli

In a separate pot, steam the broccoli florets until tender, about 5-7 minutes.

Assemble and Serve

  1. 12

    Step 1: Plate the Dish

On a plate, serve a generous portion of cooked rice. Top with a blackened redfish fillet.

  2. 13

    Step 2: Add Sauce

Drizzle the lemon butter sauce over the fish. Alternatively, top with mango salsa or crawfish cream sauce.

  3. 14

    Step 3: Serve with Broccoli

Add a side of steamed broccoli to the plate and serve hot.
