Prepare the Pork Loin
Begin by trimming any excess fat from the pork loin to ensure even cooking.

Season the Pork
In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper to create a marinade. Rub this mixture all over the pork loin.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Sear the Pork
In an oven-safe skillet, heat a little olive oil over medium-high heat. Once hot, add the pork loin and sear on all sides until golden brown, about 3-4 minutes per side.

Roast the Pork
After searing, transfer the skillet to the preheated oven. Roast the pork for about 25-30 minutes or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Once cooked, remove the pork from the oven, cover it loosely with aluminum foil, and let it rest for about 10 minutes before slicing.

Slice and Serve
Slice the pork loin into 1/2 inch thick slices and serve it on a cutting board. Optionally, drizzle with honey and squeeze fresh lemon juice over the top for added flavor.
