    Prepare the Meats

    Cut the pork shoulder and pork liver into large chunks. Place them in a large pot and cover with water. Bring to a boil and then reduce the heat to simmer for about 2 hours or until the meats are tender.

    In a separate pot, cook the long grain rice according to package instructions. Once cooked, set aside.

    Sauté the Vegetables

    In a large skillet over medium heat, add a little oil and sauté the finely chopped onion, green bell pepper, celery, and minced garlic until softened, about 5-7 minutes.

    Combine Ingredients

    Once the meats are cooked and tender, remove them from the pot and finely chop or grind them. In a large mixing bowl, combine the chopped meats, sautéed vegetables, cooked rice, Cajun seasoning, salt, black pepper, and shredded pepper jack cheese.

Stuffing

    Stuff the Boudin

    Using boudin casings or sausage casings, stuff the mixture into the casings, being careful not to overfill. Twist the sausages into 6-inch links.

    In a large pot, bring water to a boil. Add the stuffed boudin links and boil for about 30 minutes. Once cooked, allow to cool slightly before serving.
