Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix the hot honey, olive oil, salt, black pepper, and garlic powder. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat while the salmon is marinating.

Preparation of Mango Salsa

  1. 3

    Combine Ingredients

In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Mix gently and set aside to allow flavors to meld.

Cooking the Salmon and Broccoli

  1. 4

    Grill the Salmon

Remove the salmon from the marinade and grill each fillet for about 4-5 minutes on each side, or until cooked through and opaque.

  2. 5

    Steam the Broccoli

While the salmon is grilling, place the broccoli florets in a pot with 1 cup of water and a pinch of salt. Cover and steam for about 5-7 minutes or until tender but still bright green.

Serving

  1. 6

    Plate the Dish

Once the salmon is done, place each fillet on a plate. Top with the fresh mango salsa and serve alongside the steamed broccoli.
