Method

Hand-Battered Shrimp Preparation

    Peel and devein the jumbo shrimp, leaving the tails on. Rinse under cold water and pat dry.

    In three separate bowls, place flour, a mixture of cornmeal with cayenne, garlic powder, salt, and black pepper, and buttermilk mixed with the egg.

    Batter the Shrimp

    Dip each shrimp first in the flour, then the buttermilk mixture, and finally in the cornmeal mix, ensuring they are well coated.

    Fry the Shrimp

    Heat oil in a deep pan to 350°F. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Fried Catfish Preparation

    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat dry.

    Prepare the Coating

    In a bowl, mix cornmeal, flour, salt, black pepper, and cayenne.

    Batter the Catfish

    Dredge each catfish fillet in the coating mixture, pressing lightly to adhere.

    In the same hot oil, fry the catfish until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Crawfish Étouffée Preparation

Seasoned Waffle Fries Preparation
