Hand-Battered Shrimp Preparation
- 1
Prepare the Shrimp
Peel and devein the jumbo shrimp, leaving the tails on. Rinse under cold water and pat dry.
- 2
Prepare the Battering Station
In three separate bowls, place flour, a mixture of cornmeal with cayenne, garlic powder, salt, and black pepper, and buttermilk mixed with the egg.
- 3
Batter the Shrimp
Dip each shrimp first in the flour, then the buttermilk mixture, and finally in the cornmeal mix, ensuring they are well coated.
- 4
Fry the Shrimp
Heat oil in a deep pan to 350°F. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Fried Catfish Preparation
- 5
Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry.
- 6
- 7
Batter the Catfish
Dredge each catfish fillet in the coating mixture, pressing lightly to adhere.
- 8
Fry the Catfish
In the same hot oil, fry the catfish until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.
Crawfish Étouffée Preparation
- 9
Sauté the Vegetables
In a large skillet, heat oil over medium heat. Add diced onion, bell pepper, celery, and minced garlic. Sauté until soft, about 5 minutes.
- 10
Make the Étouffée Sauce
Stir in tomato paste, cayenne pepper, thyme, salt, and black pepper. Cook for an additional 2 minutes.
- 11
Add the Crawfish
Add the crawfish tails and chicken broth. Simmer for 10 minutes, stirring occasionally. Adjust seasoning as needed.
- 12
Garnish and Serve
Serve hot, garnished with chopped green onions and parsley.
Seasoned Waffle Fries Preparation
- 13
Cook the Waffle Fries
Prepare the frozen waffle fries according to package instructions, usually baking or frying until crispy.
- 14
Season the Fries
Once cooked, sprinkle seasoned salt over the hot fries and toss to coat.
Hush Puppies Preparation
- 15
Mix the Dry Ingredients
In a bowl, combine cornmeal, flour, baking powder, sugar, and salt.
- 16
Combine Wet Ingredients
In another bowl, whisk together egg and buttermilk. Add to the dry ingredients along with chopped green onions and mix until just combined.
- 17
Fry the Hush Puppies
Heat oil in a deep pan to 350°F. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
