Peel and devein the jumbo shrimp, leaving the tails on for presentation.

In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are fine.

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip each shrimp into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry in batches until golden brown, about 3-4 minutes per side.
