Method

For the Hand-Battered Jumbo Shrimp

  1. 1

    Prepare the Shrimp

Peel and devein the jumbo shrimp, leaving the tails on for presentation.

  2. 2

    Make the Batter

In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix until well combined.

  3. 3

    Mix Wet Ingredients

In another bowl, whisk together the eggs and milk until smooth.

  4. 4

    Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are fine.

  5. 5

    Heat the Oil

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Batter and Fry the Shrimp

Dip each shrimp into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry in batches until golden brown, about 3-4 minutes per side.

  7. 7

    Drain and Serve

Remove the fried shrimp from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.

For the Blackened Jumbo Shrimp

  1. 8

    Prepare the Shrimp

Peel and devein the jumbo shrimp, leaving the tails on for presentation.

  2. 9

    Season the Shrimp

Rub the jumbo shrimp with Cajun seasoning, ensuring that each shrimp is well coated.

  3. 10

    Heat the Oil

In a skillet, heat the olive oil over medium-high heat until shimmering.

  4. 11

    Cook the Shrimp

Add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they are opaque and cooked through.

  5. 12

    Serve

Remove from the skillet and serve hot with lemon wedges and your choice of side.
