Method

Fried Jalapeños

    Prepare Jalapeños

    Slice the jalapeños in half lengthwise and remove the seeds for less heat, if desired.

    Make the Batter

    In a bowl, combine flour, cornmeal, salt, and pepper. In another bowl, whisk together the egg and milk.

    Coat Jalapeños

    Dip each jalapeño half into the egg mixture, then dredge in the flour mixture until fully coated.

    Fry Jalapeños

    Heat oil in a deep pan over medium-high heat. Fry the coated jalapeños in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Sriracha Aioli

    Mix Ingredients

    In a small bowl, combine mayonnaise, sriracha, and lemon juice. Stir until well blended.

Sandwich Assembly

    Toast Buns

    Lightly toast the brioche buns on a skillet or in a toaster.

    Layer Ingredients

    On the bottom half of each bun, spread a generous layer of sriracha aioli. Layer with lettuce, sliced tomato, sautéed red onion, fried jalapeños, and place a slice of pepper jack cheese on top.

    Finish Sandwich

    Top with the other half of the bun and press down gently.

Waffle Fries

    Cook Fries

    Cook the frozen waffle fries according to package instructions, either in an oven or deep fryer until crispy and golden.
