Fried Jumbo Shrimp

Prepare the Shrimp
Peel and devein the jumbo shrimp, leaving the tails on. Rinse them under cold water and pat them dry with paper towels.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk together until well blended.

Coat the Shrimp
Pour the buttermilk into a separate bowl. Dip each shrimp in the buttermilk, allowing excess to drip off, then dredge in the flour mixture, ensuring they are evenly coated. Set aside on a plate.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully drop the coated shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the frozen waffle fries according to package instructions, either by baking or frying.

Once cooked, toss the waffle fries with olive oil and seasoned salt to enhance flavor before serving.

In a mixing bowl, combine cornmeal, all-purpose flour, baking powder, sugar, and salt. Mix well.

Stir in the finely chopped onion, egg, and buttermilk, mixing until just combined.

In a separate pot, heat the vegetable oil over medium-high heat to about 350°F (175°C).

Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
