    Rinse the catfish fillets under cold water and pat dry with paper towels.

    Marinate

    Soak the fillets in buttermilk for at least 30 minutes to tenderize and add flavor.

    Prepare the Breading

    In a shallow bowl, mix the cornmeal, flour, cayenne pepper, salt, and black pepper.

    Heat the Oil

    In a deep skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Coat and Fry

    Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating. Fry in the hot oil for about 4-5 minutes per side, or until golden brown and cooked through.

    Transfer the fried catfish to a paper towel-lined plate to drain excess oil.

Crawfish Étouffée

    In a large pot, melt the butter over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Stir in the cajun seasoning and crawfish tails, cooking for 2-3 minutes.

    Rinse the long-grain rice under cold water until the water runs clear.

    In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.

    Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
