Incorporate Garlic
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Crawfish and Liquids
Add the crawfish tails, chicken broth, diced tomatoes (with their juices), cayenne pepper, paprika, salt, and black pepper to the pot. Stir well to combine.

Simmer
Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 20-25 minutes, stirring occasionally.

Finish and Serve
Once the étouffée has thickened to your desired consistency, adjust seasoning with more salt and pepper if needed. Stir in the sliced green onions right before serving. Serve hot over cooked white rice.
