Preparation

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and pepper. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let rest for 5 minutes before slicing.

  2. 2

    Prep the Fruits

While the chicken is grilling, wash the strawberries and blueberries. Slice the strawberries into thin slices and chop the Granny Smith apple into thin wedges.

  3. 3

    Prepare the Salad Base

In a large salad bowl, add the mixed greens as the base of the salad.

  4. 4

    Prepare the Toppings

Chop the grilled chicken into bite-sized pieces. Shred or cube the jack cheese as preferred.

Assembly

  1. 5

    Assemble the Salad

On top of the mixed greens, layer the sliced grilled chicken, strawberries, blueberries, Granny Smith apple slices, and candied pecans. Sprinkle the jack cheese on top.

  2. 6

    Add the Dressing

Drizzle the raspberry walnut vinaigrette over the assembled salad to taste. Toss gently to combine all ingredients.
