    Prepare Ingredients

    Dice the onion, green bell pepper, and celery. Mince the garlic and slice the okra. Cut the chicken thighs into bite-sized pieces and slice the Andouille sausage.

    Cook Rice

    Cook the rice according to package instructions, ensuring it's ready to serve with the gumbo.

    Sauté Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and celery (the 'holy trinity'). Cook for about 5 minutes until softened.

    Add Garlic and Sausage

    Stir in the minced garlic and Andouille sausage. Cook for another 3-4 minutes until the sausage is browned.

    Brown Chicken

    Add the chicken pieces to the pot. Cook until they are browned on all sides, about 5-7 minutes.

    Add Liquids and Seasonings

    Pour in the chicken broth and water. Add the Cajun seasoning, salt, black pepper, bay leaves, and thyme. Stir to combine.

    Simmer

    Bring the gumbo to a boil, then reduce heat to low. Let it simmer uncovered for about 30-40 minutes, stirring occasionally.

    Add Okra

    Stir in the sliced okra and cook for an additional 10-15 minutes until the okra is tender.

    Serve

    Remove bay leaves before serving. Serve the gumbo hot in cups or bowls, over a scoop of cooked rice.
