Method

Preparing the Chicken

    Season the Chicken

    Rub the chicken breasts with olive oil and coat them generously with cajun seasoning on both sides.

    Cook the Chicken

    Heat a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until fully cooked and blackened on the outside. Remove from heat and top each breast with a slice of jack cheese to melt.

Caramelizing the Onions and Cooking Bacon

    Caramelize the Onions

    Slice the large onion into thin strips. In the same skillet, add butter over medium heat. Once melted, add the onion strips and cook, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized.

    Cook the Bacon

    In a separate pan, cook the bacon slices over medium heat until crispy. Drain on paper towels and chop into smaller pieces.

Preparing the Sriracha Aioli and Assembling the Burger

    Make the Sriracha Aioli

    In a small bowl, mix together the mayonnaise and sriracha until well combined. Adjust the sriracha to taste depending on your spice preference.

    Assemble the Burger

    On the bottom half of each brioche bun, layer the lettuce, followed by the blackened chicken breast, caramelized onions, chopped bacon, and tomato slices. Spread a generous amount of sriracha aioli on the top half of the bun and place it on top to complete the burger.
