Prepare the Potatoes
Peel and dice the russet potatoes into small cubes. Boil them in salted water for about 10-15 minutes until tender but not mushy. Drain and let them cool.

Mash the Potatoes
Once the potatoes have cooled, mash them in a large mixing bowl until smooth. You can use a potato masher or a fork.

Combine the Mixture
To the mashed potatoes, add all-purpose flour, cornstarch, salt, black pepper, garlic powder, and onion powder. Mix well until all ingredients are fully incorporated.

Form the Tots
Using your hands, take small portions of the potato mixture and shape them into small cylindrical pieces (tater tots). Place them on a baking sheet lined with parchment paper.

Fry the Tots
Carefully add the shaped tater tots to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until golden brown and crispy.

Drain the Tots
Once fried, use a slotted spoon to remove the tater tots and place them on a plate lined with paper towels to absorb excess oil.

Season the hot tater tots with optional paprika and chili powder if desired. Serve immediately with your favorite dipping sauces.
