    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, chopped carrots, and chopped celery. Cook for about 5-7 minutes until the vegetables are softened and the onion is translucent.

    Add Tomato Ingredients

    Stir in the crushed canned tomatoes and tomato paste. Mix well to combine the vegetables with the tomatoes.

    Add Broth and Simmer

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes to allow the flavors to meld.

    Season the Soup

    During the last 5 minutes of simmering, add the dried basil, dried oregano, salt, black pepper, and sugar. Stir well to incorporate the seasonings.

Serving

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender, then return it to the pot.

    Garnish and Serve

    Ladle the soup into bowls, garnish with fresh chopped parsley, and serve hot.
