Prepare the Batter
In a mixing bowl, combine flour and salt. In another bowl, whisk together eggs and milk until well combined. Gradually add the wet ingredients to the flour mixture, whisking until smooth. Let the batter rest for at least 30 minutes.

Preheat the Oven
Preheat your oven to 425°F (220°C). Place a muffin tin or Yorkshire pudding tray in the oven to heat up.

Bake the Puddings
Once the oven is hot, carefully remove the tray and add 1 tablespoon of vegetable oil to each cup. Return the tray to the oven for a few minutes until the oil is sizzling. Pour the batter into each cup until almost full and bake for 20-25 minutes or until puffed and golden brown.

Make the Jam
Chop the grilled scallions and combine them in a saucepan with brown sugar and apple cider vinegar. Cook over medium heat until the mixture thickens, about 10 minutes. Adjust seasoning as needed.
Onion Soubise

Blend the Soubise
Add heavy cream and salt to the cooked onions. Blend the mixture until smooth using an immersion blender or a standard blender. Keep warm until serving.
