Preparation

  1. 1

    Prepare the Cucumbers

Wash and peel the cucumbers. Cut them in half lengthwise, remove the seeds with a spoon, and chop them into small pieces.

  2. 2

    Mince the Garlic

Peel and mince the garlic clove finely.

  3. 3

    Chop the Herbs

Finely chop the fresh dill and mint leaves. Make sure to set some aside for garnish.

Blending the Soup

  1. 4

    Combine Ingredients

In a blender, combine the chopped cucumbers, plain yogurt, minced garlic, chopped dill, chopped mint, lemon juice, and vegetable broth.

  2. 5

    Blend Until Smooth

Blend the mixture on high speed until it is smooth and creamy. If the soup is too thick, you can add more vegetable broth to reach your desired consistency.

Seasoning

  1. 6

    Add Seasoning

Add salt and black pepper to the blended soup. Taste and adjust seasoning if necessary.

Chilling

  1. 7

    Chill the Soup

Transfer the soup to a bowl or container and cover it. Refrigerate for at least 1 hour to chill before serving.

Serving

  1. 8

    Serve the Soup

Ladle the chilled cucumber soup into bowls and garnish with the reserved herbs. Enjoy!
