Preparation of Beef

    Chop the Beef

    Using a sharp knife, finely chop the beef tenderloin into small pieces. Aim for uniformity in size for even flavor and texture.

Mixing Ingredients

    Combine Ingredients

    In a mixing bowl, add the chopped beef, capers, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix gently to combine all the ingredients without mashing the beef.

    Add Egg Yolk

    Create a small well in the center of the beef mixture and carefully place the egg yolk on top. This will be mixed in just before serving.

Final Touches

    Garnish and Serve

    Sprinkle chopped chives over the top of the beef tartare and drizzle with olive oil. Serve immediately with toasted bread or crackers.
