Chocolate Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt it over a double boiler or in a microwave in 30-second intervals, stirring until smooth. Let it cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream. Using an electric mixer, whip the cream until soft peaks form. Be careful not to over-whip. Set aside.

Beat the Egg Whites
In a separate clean bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites until they become frothy. Gradually add the granulated sugar and continue beating until stiff peaks form.

Combine Chocolate and Cream
Add the melted chocolate to the whipped cream. Gently fold the chocolate into the cream using a spatula until fully combined. Make sure to do this gently to maintain the airy texture.

Add Vanilla
Add the vanilla extract to the mixture and gently fold it in.

Chill the Mousse
Spoon the mousse into serving dishes or ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Serve
Once set, serve the chocolate mousse chilled. You can garnish with additional whipped cream or chocolate shavings if desired.
