Method

Preparation of Fruit

  1. 1

    Prepare Watermelon and Cantaloupe

Cut the watermelon and cantaloupe into small cubes, ensuring they are about the same size for uniformity. Use a melon baller for a nice presentation if desired. Place them in a large mixing bowl.

  2. 2

    Compress the Fruit

Using a clean kitchen towel or cheesecloth, gently compress the cubed watermelon and cantaloupe to remove excess moisture, allowing the flavors to intensify.

Crispy Prosciutto

  1. 3

    Cook Prosciutto

In a skillet over medium heat, add the prosciutto slices. Cook until crispy, about 3-4 minutes per side. Once done, transfer to a paper towel-lined plate to cool and crisp up further.

Gremolata

  1. 4

    Make Gremolata

In a small bowl, combine the fresh parsley, lemon zest, minced garlic, olive oil, salt, and black pepper. Mix well and set aside to let the flavors meld.

Assembly

  1. 5

    Assemble the Salad

In a serving bowl, layer the compressed watermelon and cantaloupe. Spoon the ricotta cheese over the top, then crumble the crispy prosciutto on top.

  2. 6

    Drizzle with Gremolata

Finally, drizzle the prepared gremolata over the salad for added flavor and freshness. Serve immediately to enjoy the contrast of flavors and textures.
