Method

Tart Crust

    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until well combined.

    Form the Crust

    Press the mixture into the bottom and up the sides of a tart pan. Use a flat-bottomed glass or measuring cup to ensure it's evenly packed.

    Bake the Crust

    Bake the crust for 10-12 minutes or until slightly golden. Remove from the oven and let cool completely.

Chocolate Pave

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until just boiling, then pour it over the chocolate. Let it sit for 5 minutes.

    Combine Ingredients

    Stir the chocolate and cream mixture until smooth. In a separate bowl, whisk the eggs and vanilla extract together until well combined.

    Combine and Bake

    Slowly pour the egg mixture into the chocolate mixture, stirring constantly to prevent curdling. Pour the mixture into the cooled tart crust and gently tap the pan to remove air bubbles. Bake at 325°F (160°C) for 20-25 minutes or until set but still slightly wobbly in the center.

    Cool the Pave

    Remove the tart from the oven and allow it to cool to room temperature, then refrigerate for at least 2 hours until fully set.

Toasted Marshmallow

    Toast the Marshmallows

    Once the chocolate pave is set, preheat your broiler. Spread the mini marshmallows evenly over the top of the tart.

    Broil

    Place the tart under the broiler for 1-2 minutes, keeping a close eye to prevent burning, until the marshmallows are golden brown and toasted.

Assembly

    Add Apricot Jam

    Spread the apricot jam evenly over the toasted marshmallows.

    Prepare the Apricot Spoom

    In a mixing bowl, combine apricot puree, sugar, and lemon juice. In a separate bowl, whip egg whites until stiff peaks form. Gently fold the egg whites into the apricot mixture until combined.

    Serve the Tart

    Spoon the apricot spoom on top of the tart just before serving. If desired, drizzle with liquid smoke for a smoky flavor.
