Panna Cotta Preparation

Bloom the Gelatin
In a small bowl, combine the gelatin powder with 4 tablespoons of cold water. Let it sit for about 5-10 minutes until it blooms and becomes gelatinous.

Heat the Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, and 1 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat and stir in the vanilla extract. Then add the bloomed gelatin to the hot cream mixture, whisking until the gelatin is completely dissolved.

Pour into Molds
Pour the panna cotta mixture into ramekins or silicone molds. Allow them to cool to room temperature before covering them with plastic wrap.

Chill
Refrigerate the panna cotta for at least 4 hours, or until set.
Strawberry Topping Preparation

Prepare the Strawberries
Wash and hull the fresh strawberries. Cut them into halves or quarters, depending on size.

Mix Strawberries with Sugar and Lemon Juice
In a bowl, combine the prepared strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of lemon juice. Toss gently to coat the strawberries evenly.

Let it Marinate
Let the strawberry mixture sit for about 15-20 minutes at room temperature to allow the juices to release and the flavors to meld.
