For Filet Mignon

    Preheat the Pan

    Heat a cast-iron skillet or heavy pan over medium-high heat for about 5 minutes until it’s hot.

    Prepare the Steaks

    Pat the filet mignon steaks dry with a paper towel then rub both sides with olive oil, salt, and black pepper.

    Sear the Steaks

    Place the steaks in the hot skillet. Sear for 4-5 minutes on one side without moving, until a nice crust forms.

    Flip and Add Flavor

    Flip the steaks and add butter and fresh rosemary to the pan. Sear for another 4-5 minutes for medium-rare, spooning the melted butter over the steaks.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for 5 minutes before serving.

For Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into even-sized pieces. Place them into a pot of salted water.

    Cook the Potatoes

    Add the garlic cloves to the pot and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and garlic, then return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Plate the garlic mashed potatoes and serve alongside the filet mignon.
