    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels. This will help the batter stick better.

    Make the Wet Batter

    In a bowl, pour in the buttermilk. Add the calamari rings to the buttermilk and let them soak for about 30 minutes. This will tenderize the calamari.

    Mix the Dry Ingredients

    In a separate bowl, combine the flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure even distribution of spices.

    Coat the Calamari

    After soaking, remove the calamari rings from the buttermilk, allowing excess liquid to drip off. Dredge each ring in the flour mixture, ensuring they are evenly coated.

    Heat the Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by dropping a small amount of batter into it; if it sizzles, it’s ready.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Spicy Aioli

    In a mixing bowl, combine the mayonnaise, minced garlic, sriracha sauce, and lemon juice. Mix until smooth.

    Taste the aioli and add salt to taste, mixing well to combine all flavors.
