Crab Cake Preparation

    Prepare the Crab Mixture

    In a large bowl, combine the fresh lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, eggs, breadcrumbs, chopped green onions, salt, and black pepper. Gently fold the ingredients together, being careful not to break up the crab meat.

    Chill the Mixture

    Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to set. This will help the crab cakes hold their shape when cooked.

    Form the Crab Cakes

    Once chilled, remove the mixture from the refrigerator. Using your hands, form the mixture into patties, approximately 3 inches in diameter and 1 inch thick.

    Heat the Oil

    In a large skillet, heat oil over medium heat. You want enough oil to coat the bottom of the skillet.

    Cook the Crab Cakes

    Once the oil is hot, carefully place the crab cakes in the skillet. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and drain on paper towels.

    Mix the Remoulade

    In a small bowl, combine mayonnaise, Dijon mustard, hot sauce, lemon juice, chopped capers, paprika, and garlic powder. Stir until well combined.

    Chill the Remoulade

    Cover the remoulade and refrigerate for at least 15 minutes before serving to allow the flavors to meld.
