Method

Crust

  1. 1

    Prepare the Crust

In a large mixing bowl, combine the all-purpose flour, cocoa powder, and granulated sugar. Mix well.

  2. 2

    Add Butter

Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  3. 3

    Incorporate Egg Yolk

Add the egg yolk and mix until combined.

  4. 4

    Add Cold Water

Stir in the cold water, one tablespoon at a time, until the dough comes together.

  5. 5

    Chill the Dough

Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  6. 6

    Roll Out and Bake

Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to fit your tart pan. Press it into the pan and prick the bottom with a fork. Bake for 15 minutes.

  7. 7

    Cool the Crust

Remove the crust from the oven and let it cool completely.

Filling

  1. 8

    Heat the Cream

In a saucepan over medium heat, bring the heavy cream to a gentle simmer. Do not boil.

  2. 9

    Melt the Chocolate

Place the dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let sit for 2 minutes.

  3. 10

    Stir Until Smooth

Stir the mixture until the chocolate is fully melted and smooth.

  4. 11

    Add Sugar and Vanilla

Mix in the granulated sugar and vanilla extract until well combined.

  5. 12

    Incorporate Eggs

Add the eggs, one at a time, whisking until fully incorporated and smooth.

  6. 13

    Pour into Crust

Pour the chocolate filling into the cooled crust and smooth the top.

  7. 14

    Bake the Tart

Bake in the preheated oven at 350°F (175°C) for 20-25 minutes, or until the filling is set but still slightly jiggly in the center.

  8. 15

    Cool the Tart

Remove from oven and allow to cool to room temperature, then refrigerate for at least 2 hours before serving.

Topping

  1. 16

    Prepare the Berries

Wash and dry the fresh berries. You can use strawberries, raspberries, blueberries, or a mix.

  2. 17

    Serve the Tart

Once the tart is chilled, top it with fresh berries and dust with powdered sugar before slicing and serving.
