Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, and peel off the outer skin if desired. Cut the calamari into rings.

Prepare the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dredge the calamari rings in the flour mixture until evenly coated.

Fry the Calamari
Carefully add the calamari to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain Excess Oil
Use a slotted spoon to transfer the fried calamari to a plate lined with paper towels to drain excess oil.

Add Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally.

Finish with Fresh Basil
Remove the sauce from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
