Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the activated yeast mixture, pork fat, and eggs. Mix until combined.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Incorporate the shredded coconut during the last few minutes of kneading.

First Rise
Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Rolls
Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a roll and place them on a greased baking sheet.

Second Rise
Cover the rolls with a cloth and let them rise again for about 30 minutes until puffy.

Bake the Rolls
Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown. Remove from the oven and let cool slightly.

Prepare the Herb Butter
In a mixing bowl, combine the softened unsalted butter, chopped parsley, chopped chives, minced garlic, and salt. Mix until well combined.

Serve
Serve the warm coconut rolls with the herb butter on the side for spreading.
