Seasonal Vegetables

Method

Preparing the Beef Tenderloin

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Season the Beef

Rub the beef tenderloin with olive oil, then season generously with salt and black pepper on all sides.

  3. 3

    Sear the Beef

In a hot skillet over medium-high heat, add the beef tenderloin and sear for 3-4 minutes on each side until browned.

  4. 4

    Add Aromatics

Add whole garlic cloves and fresh rosemary to the skillet, then add the butter and baste the beef with the melted butter for an additional 2 minutes.

  5. 5

    Roast in Oven

Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until a meat thermometer reads 135°F (57°C).

  6. 6

    Rest the Meat

Remove from the oven, cover loosely with foil, and let rest for 10 minutes before slicing.

Preparing the Seasonal Vegetables

  1. 7

    Prepare Vegetables

Wash and trim the asparagus, peel and slice the carrots, and chop the bell pepper into bite-sized pieces.

  2. 8

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the carrots and sauté for 5 minutes.

  3. 9

    Add Remaining Vegetables

Add the asparagus and bell pepper to the skillet, season with salt and black pepper, and continue to sauté for an additional 5-7 minutes until tender.
