Preparation of Beef

Prepare the Beef
Wrap the beef tenderloin tightly in plastic wrap and place it in the freezer for about 1 hour. This will make it easier to slice thinly.

Slice the Beef
Once the beef is firm, remove it from the freezer and unwrap. Using a sharp knife or a meat slicer, slice the beef as thinly as possible. Arrange the slices on a large serving platter in a slightly overlapping pattern.

In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and black pepper until well combined.
Assembly

Assemble the Carpaccio
Evenly distribute the arugula over the sliced beef. Use a vegetable peeler to shave the parmesan cheese over the top of the arugula.

Drizzle the prepared dressing over the beef, arugula, and parmesan. Serve immediately.
