Preparation of Fish

    Prepare the Halibut

    Pat the Alaskan Halibut fillets dry with paper towels. Brush both sides with olive oil and season with salt and black pepper.

Vegetable Preparation

    Prepare the Vegetables

    Cut the cabbage into quarters and remove the core. Slice the turnips and potatoes into 1/2 inch thick pieces. Clean the oyster mushrooms and slice them if they are large. Slice the Jimmy Nardello peppers into strips.

Cooking Dashi

    Prepare Dashi Stock

    In a saucepan, combine the dashi stock with soy sauce and mirin. Bring to a simmer over medium heat, stirring occasionally. Once simmering, reduce heat to low and keep warm.

Grilling

    Grill the Halibut

    Preheat the grill to medium-high heat. Place the seasoned halibut fillets on the grill. Grill for about 4-5 minutes on each side or until the fish is cooked through and has nice grill marks.

    Grill the Cabbage and Vegetables

    While the halibut is grilling, place the cabbage quarters, turnip slices, and potato slices on the grill. Grill for about 3-4 minutes per side until they are tender and have grill marks. Add the oyster mushrooms and Jimmy Nardello peppers during the last 2 minutes of grilling.

Plating

    Serve the Dish

    On a plate, arrange the grilled cabbage, turnips, potatoes, oyster mushrooms, and Jimmy Nardello peppers. Place the grilled halibut on top and drizzle with warm dashi stock. Serve immediately.
