Cook the Rice
In a saucepan, cook white rice according to package instructions. Set aside once done.

Prepare the Fries
Fry or bake French fries according to package instructions until golden and crispy. Set aside.

Sauté the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced onions, green bell pepper, and garlic. Sauté until the onions are translucent.

Add Tomatoes and Seasonings
Stir in the sliced tomatoes, soy sauce, red wine vinegar, and cilantro. Cook for an additional 2-3 minutes until the tomatoes soften slightly. Season with salt and pepper to taste.

Serve
To serve, place a generous portion of the Lomo Saltado mixture over a bed of French fries and serve with a side of white rice.
