Instructions
Prepare the Yucca
In a large pot, boil the yucca sticks in salted water until tender, about 20 minutes. Drain and let cool.
Make the Salsa Criolla
In a bowl, mix the sliced red onion, diced tomato, chopped cilantro, lime juice, salt, and pepper. Set aside.
Prepare the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, and salt. Gradually whisk in the cold water and beer until smooth.
Fry the Seafood
Heat vegetable oil in a deep skillet or fryer to 180°C (350°F). Dip the shrimp, mussels, clams, squid, and crab meat into the batter and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Fry the Yucca
Heat more oil if necessary and fry the pre-cooked yucca sticks until golden and crispy. Drain on paper towels and season with salt.
Cook the Fish Fillet
In a separate pan, lightly season the fish fillets with salt and cook until done, about 3-4 minutes per side.
Assemble the Dish
Place the cooked fish fillet on a plate, top with the fried seafood, and serve with the fried yucca and salsa criolla on the side.
