Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and red bell pepper. Sauté until the vegetables are softened, about 5 minutes.
Add Tomatoes and Stock
Stir in the diced tomatoes and cook for another 5 minutes. Then, pour in the fish stock or seafood broth and bring the mixture to a boil.
Season and Simmer
Add the Creole seasoning, salt, and black pepper. Reduce heat and let it simmer for about 10 minutes to meld the flavors.
Add Shrimp and Coconut Milk
Add the shrimp and coconut milk to the pot. Cook until the shrimp are pink and cooked through, about 5 minutes.
Finish with Cilantro and Lime
Stir in the chopped cilantro and lime juice. Adjust seasoning with additional salt and pepper if needed.
