Cut the chicken thighs into bite-sized pieces and set aside.

In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well. In a separate bowl, whisk together the eggs and buttermilk. Combine the wet and dry ingredients to form a batter.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Chicken
Dip each piece of chicken into the batter, ensuring it is evenly coated.

Fry the Chicken
Carefully place the battered chicken pieces into the hot oil, frying in batches to avoid overcrowding. Cook for about 5-7 minutes or until golden brown and cooked through. Remove from the oil and drain on paper towels.
