Prepare the Base
In a large skillet or paella pan, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
Add Vegetables
Stir in the chopped bell pepper and tomato, cooking until softened. Season with salt, black pepper, and paprika.
Cook the Rice
Add the Arborio rice, stirring to coat the grains in the oil and vegetables. Pour in the fish broth and add saffron. Bring to a boil, then reduce heat to a simmer.
Add Seafood
After about 10 minutes, add the seafood mix and green peas. Stir gently and cover the pan. Cook for an additional 10-15 minutes until the rice is tender and the seafood is cooked through.
Final Touches
Remove from heat and let it sit covered for about 5 minutes. Serve with lemon wedges on the side.
