    Prepare the Salmon

    Preheat the grill or a skillet over medium-high heat. Rub the salmon fillets with olive oil, salt, black pepper, and ancho chili powder.

    Grill or Blacken the Salmon

    Place the salmon on the grill or in the skillet. Cook for about 5-6 minutes on each side, or until the salmon is cooked through and has a nice char.

    Cook the Seasonal Vegetables

    While the salmon is cooking, toss the seasonal vegetables in olive oil, salt, and pepper. Grill or sauté them until tender, about 5-7 minutes.

    Prepare the Parmesan Risotto

    In a saucepan, heat the broth and keep it warm. In another pot, add olive oil and Arborio rice, stirring for 1-2 minutes. Gradually add warm broth, one ladle at a time, stirring constantly until absorbed. Continue until the rice is creamy and cooked through, about 18-20 minutes. Stir in the Parmesan cheese.

    Plate the grilled salmon with the seasonal vegetables and a generous serving of parmesan risotto. Drizzle ancho cherry jam over the salmon for a sweet and spicy finish.
